This AM., I am meeting my friend "Dave" for breakfast--and--this afternoon, I have a dental cleaning planned--which I was supposed to go to yesterday. I cannot go to too many appointments in one day--and-when one returns from "far away", the medical appointments seem to pile up---
When yu live alone, do you cook for yourself--like--just for "you"?--Do you have a special recipe that is easy to make, and tasty?--Could you share it with us?--I find, living alone, I do not eat properly-- If it was an "easy to make recipe", I would cook something like that myself--and eat it--

Good morning, Lynda! Enjoy your outing with Dave! We have a big warm up in Ohio and our snow is gone and 50 degrees! Hope your dental appointment goes well! Have you noticed any news in Columbus about the dentist and his wife? Has Allison told you? National news! He was my dentist for many years! Remember I got out many mercury fillings, got a few crowns and on and on a couple years back? Well, I would not have made it without him. He planned extra time with me, let me take breaks, even go outside. Always, showing pics of his wife and kids. Always so proud. He was incredible! So sad! I have all new teeth now so I pray I only need cleanings for the longest time. Anyways, have a wonderful Wednesday! Hugs!

ReplyDeleteHow nice you are going to breakfast with Dave. Glad you are getting out and doing things. Is there a senior citizens center in your area? They usually have activities or groups you could do.
The dental cleanings are fine, it's if they find a cavity that I don't like. I just had to have a crown replaced a few months ago. Those aren't cheap.
I might be able to share some recipes with you. What kind of food do you like? Is there a specific cuisine you like? Do you have a crock pot? I love making meals in my crock pot. Put it together, turn it on and let go till it's ready. Let me know and I will try to pass on some recipes.

ReplyDeleteIt's a bit warmer here today. The high is to be in the upper 30s F, and there is a bit of sun for a change.
Love the blasts...my fave today is you and Fred on the bike.
I eat Healthy Choice frozen entrees a couple times a week, lots of sandwiches (tuna or rotisserie chicken) with added veggies and crispy onions on whole grain bread. Sometimes I make boxed mac n cheese and add baby broccoli florets and corn. Once every couple weeks I'll get Taco Bell (I will start making my burritos at home again) or Burger King.
I try to focus on healthy foods for lunch and dinner. I do eat my peanut butter creme Oreos dunked in my coffee for breakfast and my ice cream at night. I also love a salad with mixed organic greens, a protein (beans and/or cheese) and other stuff (avocado, tomato, carrots, etc).
My GI doctor wanted me to gain weight. I am up to 132#. That means I've gained 10#!
Good luck at the dentist. Hope the exam shows no cavities and that there is no gum disease.

DeleteI've cooked just for myself since I moved away for college over 40 years ago. I usually fix stuff and eat it til it's gone rather than trying to fix just one serving. This time of year, soups are easy & good. You can make a pot (stove or even better crockpot), leave some out for eating and put the rest in the freezer in containers for later. Or just make a smaller pot if you don't want a bunch of servings. If you want chicken noodle, just cook it without the noodles and add some noodles to your serving when heating up on the stove so they aren't soggy or mushy. I buy cooked rotisserie chickens a lot & either bagged salad kits or frozen vegetables (throw in the microwave or steam on the stove). The chicken lasts a few days in the fridge, just cut off some and add to the salad or heat up to go with the veggies. I usually slice off a good part of the breasts & cut up and put in freezer bags for later meals & then make broth with the carcass in the crockpot (can freeze that, too). Then you could pull out some of that frozen breast meat & broth, thaw it out, put in a pot with some rice, carrots, onion & seasonings for a pot of chicken & rice. You could make chicken salad, but I don;t like chicken salad made from frozen chicken; I will make some from the rotisserie chicken before it's frozen though.

DeleteI hate to admit it - but I really don't cook for myself much. When I go out for a lunch or dinner, I always try to bring back 1/2 of the meal to have for another day. My hubby was a good eater and always loved my cooking. Without him to cook for - there is no joy for me. My daughter and one of my daughter-in-laws always freeze their leftovers for me and I enjoy eating them as they said no one wants the leftovers at their homes! I do buy frozen dinner entrees to have in the freezer too - just in case I can't find anything better to make for myself. I cooked up a storm for Christmas and Thanksgiving this year! Big dinners with lots of fun as all my kids and grandkids were here to enjoy the meals with me! I was sad when my youngest son and his family left to go back to California after being here for a whole week. Was really lonesome and quiet, but I'm back to my routines now and trying to enjoy each day of my life with my two spoiled cats!

DeleteI live alone and do cook several times a week, and then eat the leftovers. I will make a pot of soup for dinner, and maybe eat it again the next day or freeze it. I might make a pork chop, or a small steak, or a chicken breast and add rice or potatoes and some vegetables or a salad. Sometimes I make a pasta salad with chicken and vegetables and eat that for a couple of meals. Or make spaghetti and meat balls or some other pasta dish, have it for dinner and usually have leftovers for the next day at lunch or dinner. You can cook anything and eat it, you just make smaller portions. I will say, as I get older, a lot of food does not seem to taste as good as it used to. What is that all about? Unfortunately, it doesn’t seem to stop me from eating and keeping these extra 10 pounds on.😁. Good luck with the cooking! Susan /Colorado

DeleteIt's Kathy. Love your photos. Yes, you and himself look so happy on that bike! Those are great memories. It's warmed up a bit here but icy this morning. Today is a busy day for me. I had Pilates this morning, Tom and I need to do a Costco run this afternoon and my Bible Study begins tonight. That is really too much for me to do in one day but tomorrow I'll be home all day! We have a very large back yard and Tom has snow blowed several paths for Daisy. In the winter I just stand in the doorway but she also keeps watching to make sure I'm there. Her path has gotten kind of icy too so she's been very careful as she walks. Enjoy your day!

DeleteHi Lynda: I also eat alone every day. I buy some meat that's easy to make and I'll buy a cauliflower or broccoli and cook it in the steamer and it lasts for about 4 days. I have a Metro near here that makes stuffed chicken thighs which I can just do in the oven and eat for 3 or 4 nights. So it's easy to do. Crock pot is also good although I haven't used it yet this year. It is good for soup and stews and meat with veg, etc. There's lots you can do without taking a lot of time to do it. Hugs Brenda

DeleteI feel you, Lynda, as they say today. When I get up in the morning (at about 7ish), it is very dark and usually pretty cold, and I always want to just go back to bed. It doesn't help that my whole break I didn't get up until 10 or 10:30 usually. January is my most hated month (nothing but nothing happens in January, at least in February you have Valentine's Day), so I just have to do it one day at a time.

DeleteP.S. Marti again. I don't cook, never really have, so I eat frozen dinners. If you have never had frozen dinners, start with the Marie Callendar's (or Callender), they are delicious. Stouffer's are good, too. Since I'm diabetic, I have to watch my diet, so I go for the Healthy Choice or Lean Cuisines, mainly. If I don't feel like a frozen dinner, I will make grilled cheese sandwiches with a bowl of soup. Sometimes I'll buy a premade salad and have with it. When I was cooking for both John and me, I'd do chicken tenders in my Foodi Grill, then buy a personal size frozen veggie to have along with it. You can make Sloppy Joes. Hamburger Helper. Parsley Buttered Potatoes, grill some steaks, I opt for filet mignon usually, as they are small, again on my Ninja Foodi Grill, which I see you also have. You could have salmon if you like salmon. What about pork chops, and a side of salad or veggies? You could do a crock pot beef stew or chili, he and I used to make chili, he'd cut up the veggies b/c I'm not good at cutting things, afraid I'll cut myself. LOL. Those are all the ideas that I have. The other nights, I do fast food. I try to go for healthier fast food, like, say, Arby's, or Chipotle.

DeleteP.S. Again. I buy canned soup, I don't make anything from scratch. I can't stand on my feet for that long. I forgot about mac and cheese, or spaghetti. Not very often, for those, as it's too much carbs for a diabetic, but sometimes. Also, I order delivery pizza, personal or small size, but not often, or a sub from Donato's. And big salads with both of those. :) Marti

ReplyDeleteBreakfast, I cook every morning, unless I meet friends for breakfast. At home I microwave a small Yukon potato, fry egg whites in my small cast iron skillet; cut them up in a bowl, season with olive oil, salt and pepper. With coffee, of course.
My lunch and supper I handle by doing what several people mentioned; I batch cook. For instance, I'll cook a family size package of boneless skinless chicken thighs with my favorite seasoning. I put two of them along with a little of the pan drippings to keep moist into small containers and freeze, pulling them out the morning I need them. In winter I'll steam them in a pot along with whatever vegetable I want; I keep fresh and frozen in the house. In summer I use the cooked protein on a nice salad. Sometimes I make some ramen (with low-sodium ramen spice) and throw in some frozen vegetables and protein.
Like others, I'll make a batch of soup and divide it into storage containers, putting them in the freezer so I can have them other times ... I just put a container in the refrigerator a day or so before I want to eat it, and I have enough for three or so servings. Some bread or fruit on the side and yum. Recently I made some lamb stew, and shared part of it with a friend who also likes lamb, so none went to waste. Some vegetables, I don't like the texture after freezing them, so I make smaller batches.
I don't happen to go to the senior center, as I don't have time, but I know that they have activities and generally have lunch for a reasonable price, which seems nice, as the people can eat with company.
I know you're still pretty new in the eating/living/cooking alone, but with your nursing background I figure you know that if you're not eating well your health will not hold up well and you could lose your zest for life and independence.
I'll be excited to hear what you do.

If you don't want to cook....try Marie Collander frozen dinners or Healthy Choice frozen dinners. Add a side salad and a frozen veg if desired.
Perhaps you'd like to get lunch at the Lodge? Or a Sr.Center. you'd have company and not have to cook. If you want something in the evening, you can heat up soup, make a sandwich...just something simple.
